Beer infused Brown Rice Pilaf

Ingredients

  • 1 small onion chopped
  • 1 + 1/2 Tlbs grape seed oil
  • 1 cup carrots diced
  • 1 cup short grain Brown rice rinsed
  • 1 + 1/4 cup light beer
  • 1 cup water
  • 1 tsp salt
  • 2 scallions

Instructions

  • Gently cook onion in oil till slightly brown approximately 5 minutes , add carrots, rice, beer, water and salt . Bring to a boil.Cover and cook as slow as possible for 45 minutes ,trying not to remove lid . Turn off , let rest for 10 minutes . Fluff with fork and top with chopped scallions.
