Black Bean + Brown Rice Patties

w/ Tomato Salsa

Ingredients

  • 2 Tbls olive oil
  • 1/2 onion chopped
  • 2 clove garlic chopped
  • 2 cups black beans cooked drained and lightly smashed
  • 1 cups cooked brown rice or any other grain you have lying around
  • 1 small zucchini coarsely grated
  • 1 + 1/3 Tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp ground cumin
  • 6 ounce boiled yellow potatoes smashed Yes skin and all
  • 1 + 1/2 cups fresh bread crumbs or Panko
  • Vegetable oil for frying
  • Salsa
  • 1 Large jalapeno pepper finely chopped
  • 2 cups chopped tomatoes
  • 1/4 cup chopped red onion
  • 1/3 cup chopped cilantro
  • 1/4 cup sliced spring onions
  • Juice of 1/4 lime + some hot sauce
  • *Salt

Instructions

  • Cook your garlic and onions in olive oil. In a large bowl combine the next 7 ingredients. Add onion mixture . Mash this with your hands until you are able to form it into balls that stay together well. Create about 10 balls and flatten into patties. Place bread crumbs in a bowl then gently one at a time coat your patties with the crumbs. Fry these in two batches using a few Tbls of oil for each . Flipping over after they brown.
  • For the Salsa just combine all the ingredients * sprinkle salt over top when serving or you will have soup.
