Blueberry Bran Banana Buckwheat Muffins

Ingredients

  • 2 Cups Raisin Bran crushed should equal 1 cup
  • 3/4 cup White flour
  • 1/4 cup Buckwheat Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 Stick unsalted butter room temp
  • 1/2 cup dark brown sugar or light brown with a little molasses
  • 2 Bananas ripe Mashed
  • 1 Egg beaten
  • 1/2 cup Blueberries
  • Streusel Topping
  • 3/4 cup flour 1/2 whole wheat 1/2 white
  • 3/4 cup Sugar 1/2 white 1/2 Brown
  • 1 Tbls water
  • 1 tsp Cinnamon
  • 1/4 cup unsalted Butter
  • 1/4 cup Walnuts Coarsely chopped

Instructions

  • For topping just mix all ingredients with your fingers together until it begins to clump together.
  • Preheat Oven 375° Grease muffin Tin
  • Mix together first 5 ingredients, set aside. Cream together butter and sugar in an electric mixer until light and creamy about 4 minutes, add bananas mix 30 seconds, add egg mix 30 seconds. Fold in dry mixture, don’t over mix. Fill muffin tin 3/4 way up, poke a few blueberries around the edge and top off with a table spoon or so of topping. Bake 15 to 20 minutes center of oven. These muffins are on the dark side dew to the healthy ingredients.
