Ingredients

  • 1 cup boiling water
  • 3 cups bran Cereal
  • 1 +1/2 cups sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 cups buttermilk or Kefir
  • 2 + 1/2 cups flour
  • 2 +1/2 tsp baking soda
  • 1 tsp salt
  • Makes 18 muffins

Instructions

  • Preheat oven 400°
  • In a large bowl pour boiling water over bran cereal , toss , let cool flipping around a little.You can put this in fridge to accelerate the cooling process , as it needs to be cool when adding to other ingredients. In a second bowl mix the sugar and oil together , then add the eggs one at a time , mixing well , then mix in your buttermilk . In a third bowl whisk together the flour, baking soda and salt.
  • Now fold your flour mixture into the egg mixture and then lastly fold in your cereal mixture. Toss in some nuts or raisins if you like ,but don’t over mix! Scoop out batter into an oiled muffin tin with or without paper liners. Bake in upper third of oven ,15 minutes. Batter can be saved for a few days .People love this recipe.
