Carrot Cake

The old classic My way

Ingredients

  • 2 cup flour
  • 1 tsp baking powder
  • 1 tsp bring soda
  • 3/4 tsp salt
  • 1 cup vegetable oil
  • 1 +1/2 cups sugar
  • 2 tsp vanilla
  • 2 Tbls milk
  • 2 + 1/2 cups grated carrots
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins or diced apricots
  • Frosting optional
  • 4 ounce butter room temp
  • 4 ounce cream cheese room temp
  • 2 cups confectionery sugar
  • 1 tsp vanilla
  • 1/2 cup toasted walnuts

Instructions

  • Heat oven 365 degrees . Butter and flour a 9 x 9 inch baking pan or something of equal capacity . Whisk together in a bowl ,the flour , baking soda , baking powder and salt. In another bowl combine the sugar and oil, then add your eggs one at a time, mixing well. Now add the carrots + milk , mix , next fold dry ingredients into batter including the nuts and fruit. Bake 45 minutes in center of oven. Test for doneness by gently pressing down in the center of cake , if it bounces back its done .
  • To make frosting, Cream together cheese + butter . Then slowly add sugar , mixing well. Finish off by adding vanilla. Spread across top of cake. Top off with additional walnuts if desired.
