Ginger Chicken Thighs

Ingredients

  • chicken thighs bone in + skin on
  • salt and pepper
  • 3 Tbls fresh ginger grated
  • 1/2 onion diced
  • 2 clove garlic chopped
  • 1 apple peeled + diced
  • 1/2 tbls curry powder
  • 2 cups chicken stock
  • 1 cup button mushrooms quartered
  • 1 can artichoke hearts halved

Instructions

  • Preheat oven 375°
  • Season chicken with salt and pepper. In a frying brown off chicken on both sides. Remove from pan and set into a roasting pan, place artichokes around the thighs. To the frying pan add ginger, onion, garlic, apple, curry powder, + mushrooms , add a little oil if need be. Cook slowly for 10 minutes. Add chicken broth stir ,then pour this mixture over chicken. Roast uncovered 45 minutes. That should do it.
