Japanese Carrot Dip

Japanese Carrot Dip

Ingredients

  • 2 cups carrots peeled cooked (very soft) + cut into 1/2 in. pieces
  • 2 Tbls cup onion finely chopped
  • 2 Tbls fresh ginger peeled + chopped
  • 2 Tbls lite soy sauce
  • 1/8 cup rice vinegar
  • 1/8 cup canola or safflower oil
  • 1 tsp salt

Instructions

  • Put all ingredients together in a blender. Puree till smooth. You may need to stop the machine + stir a numerous times until the blender can really get going .It may start out a little thick but give it a chance.
  • To make into a dressing thin out with a little more oil + vinegar. Good luck
