Japanese Chicken Noodle Salad

Ingredients

  • 1 roasted chicken skin and bones discarded + meat torn into large shreds
  • 6 oz Soba noodles cooked according to the package + tossed with a little oil to prevent sticking
  • 6 oz Sugar snaps cooked for one minute in boiling water then cut into thin strips.
  • 1/3 cup scallions thinly cut on bias
  • 1/2 each peppers yellow red , orange cut into thin strips
  • 3/4 cup carrots in thin strips
  • 4 inner stalks of celery cut thinly at a 45° angle
  • 1/2 cup cilantro leaves
  • 4 scallions in thin slices
  • 1 small can sliced water chestnuts in thin strips
  • Ginger Dressing
  • 1 + 1/2 Tbls grated ginger
  • 1 clove garlic minced
  • 1 Tbls soy sauce
  • 1 Tbls mirin
  • 1 tsp salt
  • 3 tables rice vinegar
  • 1/3 cup vegetable oil
  • 1/2 tsp toasted sesame oil
  • 2 tsp toasted sesame seeds

Instructions

  • Toss together all salad ingredients. Whisk together ginger dressing, then add as much as you like to salad . You may not want to use all of the dressing .
