3 Bean Vegetable Soup
Ingredients
- 3 Tbls olive oil
- 2 Clove Garlic
- 2 carrot
- ½ onion
- 3 stalk celery
- 2 Cup cabbage
- 1 small zucchini
- 1 small summer Squash
- 5 cups Stock Chicken , Beef or Veggie
- *3 cups of a cooked 3 bean mixture
- 14 oz can diced tomatoes
- 2 bay leafs
- 2 Tbls chopped parsley
- Salt + pepper to taste
- 2 tsp 3 Herb Walnut pesto per serving
Instructions
- This recipe makes a lot of Soup .3 quarts, Adjust accordingly .
- Medium Dice all your vegetables, keeping your cabbage and squash separate .In a large pot heat oil . Add Garlic stir till slightly browned. Add onions , celery + carrots. Cook covered 10 minutes. Add squashes and cabbage.cook 15 minutes covered. add stock ,tomatoes , beans + bay leafs. Cook 20 minutes , Season with S+ P ,toss in parsley . You are done . Just a few tsp of pesto.
