3 Bean Vegetable Soup

Ingredients
  

  • 3 Tbls olive oil
  • 2 Clove Garlic
  • 2 carrot
  • ½ onion
  • 3 stalk celery
  • 2 Cup cabbage
  • 1 small zucchini
  • 1 small summer Squash
  • 5 cups Stock Chicken , Beef or Veggie
  • *3 cups of a cooked 3 bean mixture
  • 14 oz can diced tomatoes
  • 2 bay leafs
  • 2 Tbls chopped parsley
  • Salt + pepper to taste
  • 2 tsp 3 Herb Walnut pesto per serving

Instructions
 

  • This recipe makes a lot of Soup .3 quarts, Adjust accordingly .
  • Medium Dice all your vegetables, keeping your cabbage and squash separate .In a large pot heat oil . Add Garlic stir till slightly browned. Add onions , celery + carrots. Cook covered 10 minutes. Add squashes and cabbage.cook 15 minutes covered. add stock ,tomatoes , beans + bay leafs. Cook 20 minutes , Season with S+ P ,toss in parsley . You are done . Just a few tsp of pesto.
  • I believe its best to cook your own beans . Much more healthy than something out of a can! Make extra and use in other things.
