  • 3 Tbls olive oil
  • ¾ cup fresh course bread crumbs
  • 1 tsp dried thyme
  • 1 Tbls whole grain mustard
  • salt + pepper
  • 1 .5 lbs fish filet- Cod Banzino or Red Snapper
  • Green olives
  • Chopped parsley
  • Lemon Wedges


  • Add 1 Tbls of oil to the bread crumbs along with the thyme and some salt and pepper. Drizzle the remaining 2 Tbls olive oil onto a roasting pan.lay out fish onto pan and spread the mustard across the top along with some Salt and pepper. Then sprinkle bread crumb mixture over top of fish. Roast in a preheated very hot oven , maybe 475 degrees for approximately 10 to15 minutes . You may want to finish under broiler to brown off crumbs. Serve with some green olives , lemon wedges and parsley. how could that not be good!!!
