Beer infused Brown Rice Pilaf
Ingredients
- 1 small onion chopped
- 1 + 1/2 Tlbs grape seed oil
- 1 cup carrots diced
- 1 cup short grain Brown rice rinsed
- 1 + 1/4 cup light beer
- 1 cup water
- 1 tsp salt
- 2 scallions
Instructions
- Gently cook onion in oil till slightly brown approximately 5 minutes , add carrots, rice, beer, water and salt . Bring to a boil.Cover and cook as slow as possible for 45 minutes ,trying not to remove lid . Turn off , let rest for 10 minutes . Fluff with fork and top with chopped scallions.
