Brussel Sprout leaves w/ pecans and bacon

  • 1 lbs Brussels sprouts
  • 4 strips bacon cut into ¼ in pieces
  • 1 handful pecans
  • salt and pepper to taste


  • Peel Brussel sprout leaves down to point that the leaves turn yellow , cut this inner core in half.
  • Toast pecans in a pan using low heat for about 6 minutes.
  • Cook bacon in a large pan ( big enough to fit all of the sprouts) slowly till fat is rendered out and is golden and crispy.
  • Remove strips from pan leaving rendered oil.
  • Add Brussel Sprout leaves + inner cores to pan , Cook over high heat for about 10 minutes or until lightly browned.
  • Season with Salt and Pepper and top with pecan and bacon


1 table spoon of olive or grape
seed oil can be substituted for bacon.
