Chocolate Chip Oatmeal Cranberry Cookies
Soft inside Crunchy outside
Ingredients
- 8 oz unsalted butter room temperature
- ¾ cup white sugar
- ¾ cup brown sugar
- 1 Tbls molasses
- 1 tsp vanilla extract
- 2 eggs
- 1 cup white flour
- 1 cup whole wheat flour minus 1 Tbls
- ¼ cup cocoa powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 2 cups old fashioned oatmeal
- 1 cup chocolate chips
- 1 cup dried cranberries
Instructions
- Preheat oven 365°
- Whisk together the 2 flours, cocoa powder, salt ,baking soda + cinnamon.
- In the bowl of an electric mixer using your paddle attachment cream together butter, sugar +vanilla until a little bit fluffy, about 4 to 5 minutes. Scraping the bowl down a few times, to insure even blending . Next add your eggs, one at a time and mixing thoroughly after each addition. Now gradually add in the flour mixture, mixing just until it is fully incorporated. Maybe one minute. Finally add oatmeal, chips, + berries mixing just until the dough comes together 15 to 20 seconds (This step can be done by hand). Scoop out dough creating 2 Tbls size balls , place them onto an ungreased cookie sheet tray, one inch apart. Moisten your hands, pick up one ball at a time and squash a little . Place back onto tray, Bake 12 to 14 minutes . Remove from oven, cool for 3 minutes, then put on a wire rack to complete cooling process.
