Coconut Curry Winter Squash
Ingredients
- 2 + 1/4 lbs kabocha squash
- ½ cup water
- 1 - 14 oz can coconut milk
- ¾ Tbls red curry paste
- salt
- Cilantro
Instructions
- Peel squash , cut in half , scoop out seeds, cut in 1 inch cubes , place in a large pot with water and a little salt, bring to a boil cover and simmer gently 15 to 20 minutes until just done.Remove to a colander, Drain off water if there is any left. In same pot, pour in the coconut milk and curry paste, whisk together . Add squash back into pot and gently stir . Garnish with cilantro . What could be easer?
