French Lentil + Black Rice Soup

  • 3 Tbls Olive oil
  • 3 cloves garlic chopped
  • 1 cup each onions celery + carrots, everything small dice
  • 2 bay leafs
  • 1 tsp dried thyme
  • 1 + 1/4 cups french lentils
  • cup black rice
  • 9 cups vegetable stock
  • 2 Tbls tomato paste
  • 1 Tbls Chipotle in adobo sauce chopped
  • salt and pepper to taste


  • In a large stock pot heat olive oil, add garlic and stir around for a minute or two, lightly browning , Next add onions ,celery + carrots, cooking gently for about 10 to 15 minutes covered, stir occasionally. Now add the rest of your ingredients, bring to a boil and then reduce heat to a simmer and cook at least 45 minutes. You may want to add more liquid if desired.
