Grandmas Lima Bean Casarole
Ingredients
- 1 lbs dried lima beans
- 1 bay leaf
- 2 tbs butter
- 1 medium onion
- 8 oz turkey bacon
half diced up ,the rest go on top of beans before baking (regular bacon can
- 3 cups milk
- salt and pepper to taste
- ⅛ tsp nutmeg
Instructions
- Cover beans with water and soak over night.Change water and simmer with bay leaf till just barely cooked.Drain
- In a heavy gage pot ,cook diced bacon with butter till slightly browned add onions and continue cooking till translucent.a lid can be used during this process.
- Combine all ingredients and pour into a oven proof baking dish ,finishing off with the slices of bacon across the top of the beans.Bake covered in a 350º oven for 1 1/2 to 2 hrs ,uncovering for the last 1/2 hr to brown off bacon a little.
