Japanese Chicken Noodle Salad
This makes a lot
Ingredients
- 1 roasted chicken skin and bones discarded + meat torn into large shreds
- 6 oz Soba noodles cooked according to the package + tossed with a little oil to prevent sticking
- 6 oz Sugar snaps cooked for one minute in boiling water then cut into thin strips.
- ⅓ cup scallions thinly cut on bias
- ½ each peppers yellow red , orange cut into thin strips
- ¾ cup carrots in thin strips
- 4 inner stalks of celery cut thinly at a 45° angle
- ½ cup cilantro leaves
- 4 scallions in thin slices
- 1 small can sliced water chestnuts in thin strips
- Ginger Dressing
- 1 + 1/2 Tbls grated ginger
- 1 clove garlic minced
- 1 Tbls soy sauce
- 1 Tbls mirin
- 1 tsp salt
- 3 tables rice vinegar
- ⅓ cup vegetable oil
- ½ tsp toasted sesame oil
- 2 tsp toasted sesame seeds
Instructions
- Toss together all salad ingredients. Whisk together ginger dressing, then add as much as you like to salad . You may not want to use all of the dressing .
