Pickled Beets
Ingredients
- 3 medium sized beets
- ¼ cup red wine vinegar
- 1 + 1/2 Tbls brown sugar
- salt and pepper
- ½ cup red onion thinly sliced
- ⅓ cup grape seed oil
- Goat cheese optional
Instructions
- Boil beets , then peel and slice them into thin strips. In a small pot combine vinegar , sugar, salt and pepper. Bring them to boil add onions and turn off heat let cool. Add beets ,toss, let sit for a minute. add oil mix well. Adjust seasoning. Top with little crumbled goat cheese if desired.
