Roasted Root Vegetables
Ingredients
- 2 Large carrots in large slices
- 4 small Yukon potatoes quartered
- 4 purple potatoes quartered
- 2 turnips cut same size as potatoes
- 3 medium sized parsnips in large slices
- 1 large sweet potato large dice
- 5 shallots peeled and cut in half
- 2 beets boiled + cut into large dice
- 6 whole garlic clove peeled
- ½ Tbls fresh thyme leaves
- ½ Tbls rosemary
- ⅓ cup olive oil
- Salt and pepper to taste
Instructions
- Preheat oven 400°
- Toss all ingredients then spread out on a roasting pan . Bake flipping veggies around a few times for about 1 hour or until tender and starting to brown. That's it
