Romain + Burrata Salad

Ingredients
- Serve 5
- 1 head romaine cut in bit size pieces
- 1 + 1/2 lbs burrata cheese cut in half if need be
- 1 large carrot peeled and coarsely shredded
- ½ cup slivered almonds toasted
- Lemon vinaigrette
- 2 Tbls lemon juice
- 2 tsp shallot chopped
- 2 tsp dijon mustard

- 4 Tbls olive oil
- Whisk together all ingredients finishing with olive oil
Instructions
- Soak lettuce in cold water 10 minutes to crisp up ,then spin dry in salad spinner.
- Divide salad ingredients amongst your plates in the order they are listed. Drizzle vinaigrette over top . Fast Easy Delicious
