Riced Broccoli + Cauliflower

Everyone is using cauliflower rice. Why not throw in some broccoli?

Ingredients

  • 2 Tbls coconut oil
  • 1/4 cup shallots
  • 3/4 lbs cauliflower
  • 3/4 lbs broccoli
  • 1 carrot tinny dice
  • S + P to taste

Instructions

  • Using a food processor chop your cauliflower and broccoli into rice size pieces . Do each one separately.
  • In a sauté pan cook your shallots in oil ,one minute. Turn heat to high then add remaining ingredients cook 2 to 3 minutes .done Light , healthy, Easy.
