Roasted Root Vegetables

Ingredients

  • 2 Large carrots in large slices
  • 4 small Yukon potatoes quartered
  • 4 purple potatoes quartered
  • 2 turnips cut same size as potatoes
  • 3 medium sized parsnips in large slices
  • 1 large sweet potato large dice
  • 5 shallots peeled and cut in half
  • 2 beets boiled + cut into large dice
  • 6 whole garlic clove peeled
  • 1/2 Tbls fresh thyme leaves
  • 1/2 Tbls rosemary
  • 1/3 cup olive oil
  • Salt and pepper to taste

Instructions

  • Preheat oven 400°
  • Toss all ingredients then spread out on a roasting pan . Bake flipping veggies around a few times for about 1 hour or until tender and starting to brown. That’s it
