Spanish Rice

Ingredients

  • 1 + 1/2 Tbls olive oil
  • 2 cloves garlic chopped
  • 1/2 cup onions small dice
  • 1 Jalapino pepper minced
  • 1/2 tsp dried oregano
  • 1 + 1/12 cups basmati rice rinsed
  • 1 cup chopped tomatoes
  • 1 + 1/2 cups pinto beans
  • 1 + 1/12 cups water
  • 1 cup tomato sauce
  • 1 tsp salt

Instructions

  • Heat oil in a medium size pot, add garlic, onions, oregano + Jalapeño pepper cook 3 minutes . Stir in rice, then chopped tomato, pinto beans, water, tomato sauce and salt. Bring to boil , cover and reduce to a slow simmer . Cook 15 minutes , turn off heat and let sit 10 minutes without removing lid.Then fluff with fork.
