Sweet and Sour Beets + Carrots

Inspired by a beet dish My mom Lenore Kukle used to make

  • 3 medium sized beets roasted or boiled. Then peeled and diced
  • 4 Carrots diced and simmered in slightly salted water until tender drain. Combine those 2 and set aside.
  • 1/3 cup cranberry juice
  • 1/3 cup orange Juice
  • 1/4 cup combination of lemon and lime juice or your favorite vinegar
  • 1/4 cup honey
  • 1 Tbls corn starch
  • 1 Tbls butter room temp
  • S + P


  • Combine all juices , honey + corn starch ,mix well ,making sure corn starch is dissolved .In a medium pot combine all ingredients except butter.Bring to a full boil for 2 minutes. turn off heat add butter salt and pepper.Enjoy
