2cupscarrots peeledcooked (very soft) + cut into 1/2 in. pieces
2Tblscup onion finely chopped
2Tblsfresh ginger peeled + chopped
2 Tbls lite soy sauce
⅛cuprice vinegar
⅛cupcanola or safflower oil
1 tspsalt
Instructions
Put all ingredients together in a blender. Puree till smooth. You may need to stop the machine + stir a numerous times until the blender can really get going .It may start out a little thick but give it a chance.
To make into a dressing thin out with a little more oil + vinegar. Good luck
