1+ 1/2 lbs boneless pork loinchicken breast can be substituted
2Tblssoy sauce
2clovegarlic minced
1thumb of fresh ginger peeled and grated
1cupcorn starch
2cupneutral oilcanola or grape seed
½red pepper 3/4 inch dice
½green pepper 3/4 inch dice
1+ 1/2 cups pineapple chunks
1cupapple juice
1cuporange juice
⅓cupsugar
⅓cuprice vinegar
cilantro + scallions
Instructions
Cut pork into 3/4 inch cubes add soy sauce, ginger and garlic, stir together , let marinate in fridge at least 1/2 hour.
To make sauce heat apple juice, orange juice, sugar and vinegar. Bring to boil and add 2 Tbls of your corn starch that has been mixed with 2 Tbls of cold water whisking constantly as you return juice to a boil . Turn off heat and set aside. Sauté your peppers for 2 minutes in a little oil . Add to sauce along with pineapple.
In a sauce pot or deep fryer heat your oil to 350°. Working in 3 or 4 batches take your pork cubes and roll in the corn starch and then into fryer , cooking each batch for about 4 minutes. Check for doneness by cutting one piece in half, to get a idea of how you are doing. Remove to paper towel as you go along. When pork is all done reheat your sauce and pour over meat. Garnish with scallions and cilantro. Delicious
