1roasted chicken skin and bones discarded + meat torn into large shreds
6ozSoba noodles cooked according to the package + tossed with a little oil to prevent sticking
6ozSugar snaps cooked for one minute in boiling waterthen cut into thin strips.
⅓cupscallions thinly cut on bias
½each peppers yellowred , orange cut into thin strips
¾cupcarrots in thin strips
4inner stalks of celery cut thinly at a 45° angle
½cupcilantro leaves
4scallions in thin slices
1small can sliced water chestnuts in thin strips
Ginger Dressing
1+ 1/2 Tbls grated ginger
1clovegarlic minced
1Tblssoy sauce
1Tblsmirin
1tspsalt
3tables rice vinegar
⅓cupvegetable oil
½tsptoasted sesame oil
2tsptoasted sesame seeds
Instructions
Toss together all salad ingredients. Whisk together ginger dressing, then add as much as you like to salad . You may not want to use all of the dressing .
