Cut Squash in half and scoop out pulp and seeds , cut into 1 inch cubes . Heat oil in a large heavy gage pot,Add mustard + cumin seeds.Stir until they are fragrant and begin to pop about one minute.Add all remaining ingredients. Bring to a boil , stir to combine well, cover and simmer. its important at this point to only stir your squash ounce or twice more as it will break apart!!! cook for approximately 20 minutes testing for doneness by pocking with a small sharp knife . When done let rest covered 15 minutes.
