Drain tofu place in a strainer , put a small pot one top of tofu (helps to remove some of the moisture) leave for 15 minutes,
Slice each block of tofu into In 3 equal squares.Spread them out on a sheet pan.Combine soy sauce , ginger , garlic and mirin. Pour this solution over the tofu . Let marinate 15 minutes. Combine cilantro ,scallions, salt + pepper ,vinegar and olive oil in a small vessel .Heat a large non stick or black cast iron frying pan. Add 1 Tbls oil and half of the tofu. Brown slowly 3 to 4 minutes on each side, trying not to disturb the squares as you brown and turn them.Repeat with the remaining tofu. Top off with scallion cilantro mixture.
