Instructions
Melt butter in a gallon size soup pot, add onions and gently sweat (covered pot) until translucent about 8 to 10 minutes. Add next 4 ingredients and simmer until veggies are nice and tender, about 30 minutes. Take off fire and let cool down for at least 10 minutes . Now add coconut milk, lemon juice , lemon zest and ginger juice. Puree in a blender, giving it plenty of time to get nice and smooth. Season with S + P
Garnish with sliced scallions and drizzle with hot sauce. Yummy
