Brussel Sprout leaves w/ pecans and bacon
Ingredients
- 1 lbs Brussels sprouts
- 4 strips bacon cut into ¼ in pieces
- 1 handful pecans
- salt and pepper to taste
Instructions
- Peel Brussel sprout leaves down to point that the leaves turn yellow , cut this inner core in half.
- Toast pecans in a pan using low heat for about 6 minutes.
- Cook bacon in a large pan ( big enough to fit all of the sprouts) slowly till fat is rendered out and is golden and crispy.
- Remove strips from pan leaving rendered oil.
- Add Brussel Sprout leaves + inner cores to pan , Cook over high heat for about 10 minutes or until lightly browned.
- Season with Salt and Pepper and top with pecan and bacon
Notes
1 table spoon of olive or grape
seed oil can be substituted for bacon.
