Ginger Squash Soup
Try this for your next Elegant Dinner Party! It is ExcellentMakes about 2 quarts
Ingredients
- 2 Tbls Butter
- 1 ½ cups Onion small dice
- 1 ½ cups Carrots peeled medium dice
- 1 ½ cups Gold Potatoes peeled medium dice
- 4 ½ cups Butternut Squash peeled medium dice
- 4 ½ cups Chicken or Vegetable Stock
- 8 oz. Coconut Milk
- juice of 1 Lemon
- zest of 1 Lemon
- 3 inch piece of ginger peeled and finely grated, about an 1/8 of a cup, maybe a little more.
- Squeeze the Juice out of ginger discarding pulp.
- Scallion strips
- Your favorite hot sauce
Instructions
- Melt butter in a gallon size soup pot, add onions and gently sweat (covered pot) until translucent about 8 to 10 minutes. Add next 4 ingredients and simmer until veggies are nice and tender, about 30 minutes. Take off fire and let cool down for at least 10 minutes . Now add coconut milk, lemon juice , lemon zest and ginger juice. Puree in a blender, giving it plenty of time to get nice and smooth. Season with S + P
- Garnish with sliced scallions and drizzle with hot sauce. Yummy
