Kohlrabi Slaw

  • 6 Cups equal parts Kohlrabi, Carrots, Red Cabbage thinly sliced, I use a mandolin.
  • 2 + ½ tbsp white vinegar
  • 3 +1/2 tbsp vegetable oil
  • 1 +1/2 tbsp maple syrup
  • Salt + Pepper to taste


  • After slicing your veggies soak them in ice water for about 15 minutes. Drain well using a salad spinner. Then just simply toss with remaining ingredients. Taste and adjust seasoning.
