Melissa’s Joy Salad
Named joy because of the joy the bright colors express and because the salad is a complete meal with a good balance of protein, carbs and sweetness.Makes 2 portions
Ingredients
- 5 to 6 cups curly Kale torn into small pieces
- ⅓ to ½ cup of the following
- tricolor quinoa cooked
- chic peas
- red bell pepper big chunks
- chunks of feta
- blueberries
- avocado
- cooked shrimp or chicken if desired
- ¼ cup toasted nuts or seeds of your choice
- 1 tsp salt
- 1 Tbls balsamic vinegar
- 2 to 3 Tbls olive oil
- Fresh ground pepper
Instructions
- Toss the kale with vinegar and salt . Let rest in fridge while you gather the rest of your ingredients. Then simply put kale on a plate and top with all your ingredients or just toss everything together.
