Melissa’s Joy Salad

Named joy because of the joy the bright colors express and because the salad is a complete meal with a good balance of protein, carbs and sweetness.

  • 5 to 6 cups curly Kale torn into small pieces
  • ⅓ to ½ cup of the following
  • tricolor quinoa cooked
  • chic peas
  • red bell pepper big chunks
  • chunks of feta
  • blueberries
  • avocado
  • cooked shrimp or chicken if desired
  • ¼ cup toasted nuts or seeds of your choice
  • 1 tsp salt
  • 1 Tbls balsamic vinegar
  • 2 to 3 Tbls olive oil
  • Fresh ground pepper


  • Toss the kale with vinegar and salt . Let rest in fridge while you gather the rest of your ingredients. Then simply put kale on a plate and top with all your ingredients or just toss everything together.
