One Wok Dinner
Make sure everything is cut up, lined up and ready to go
Equipment
- Wok or Very Large Sauté pan
Ingredients
- ⅓ cup peanut oil
- 2 clove garlic thinly sliced
- ¼ cup fresh ginger thin strips
- 1 jalapeño thinly sliced
- 1 chicken breast boneless skinless thinly sliced
- 12 medium shrimp peeled
- ½ onion cut into strips
- 2 cups baby broccoli also called broccolini stems cut in strips and tops left whole each kept separate
- 1 cup mushrooms sliced
- ½ red bell pepper cut into strips
- 8 oz fresh noodles lo mein or fettuccine cooked rinsed and tossed with a little oil.
- 3 scallions sliced
- ¼ cup cilantro leaves
- ¼ cup peanuts toasted + coursley chopped
Sauce
- 2 Tbs Soy sauce
- 2 tsp sugar
- 2 Tbs oyster sauce
- 2 Tbs mirin
- 1 tsp toasted sesame oil
- Mix all these ingredients together
Instructions
- Heat peanut oil in wok until smoking, leave heat on high and constantly stir ingredients throughout entire cooking process. Add ginger, garlic + jalapeño .Cook one minute. Add shrimp and chicken cook 2 minutes, remove those items from the wok and reserve. Next add onions + broccoli stems cook 2 minutes. Next add carrots, cook 3 minutes. Next add red pepper, mushrooms and broccoli tops, continue cooking until ingredients are nice and hot about 3 or 4 minutes. Now add noodles, sauce, reserved chicken and shrimp, stir until hot. Top with scallions, cilantro and chopped peanuts.
