Chili Con Carne

As taught to me 40 years ago by the Meloney’s
Course Lunch, Main Course

Ingredients
  

  • 1 Tbls olive oil if using turkey use 3
  • 2 lbs ground beef I use turkey + venison
  • 2 cups chopped onions
  • 2 cloves garlic
  • 1 Jalapeno pepper fine dice
  • 2 Tbls chili powder
  • 1 Tbls smoked paprika
  • 2 tsp cumin
  • 28 ounces chopped tomatoes
  • 2 cups tomato sauce
  • 1 quart kidney beans I use a combination of pinto and one or 2 others
  • salt to taste

Instructions
 

  • In a large pot heat oil then add meat .Brown off. If using beef drain off grease after meat is Brown . Now add onions, garlic, jalapeño, + spices. Cook slowly 10 minutes stirring regularly. Next add remaining ingredients. Simmer 30 to 45 minutes .Season with salt Serve with rice for perfect protein. Can also be garnished with red onions , Monterey jack cheese , red onions and sour cream.
