Cucumber Yogurt Salad
Ingredients
- 2 English cucumbers thinly sliced
- ¼ onion thinly sliced
- 2 tsp salt
- 1 cup whole milk yogurt or even 5%
- 1 Tbls white wine vinegar
- 1 Tbls olive oil
- 2 tsp sugar
- Fresh ground pepper
Instructions
- Sprinkle salt over cucumbers and onions , place in a colander over a bowl and into fridge for 20 minutes to extract some of the water and crisp up. Remove from fridge pour off liquid in bowl and replace with cucumbers. Add the rest of your ingredients. Easy and lasts for days.
