French Style Green Beans

  • 1 +1/2 lbs butter
  • 2 Shallots small dice
  • 1 Lbs green beans
  • salt + Pepper
  • slivered almonds toasted Toast by stirring around in a small frying pan until lightly browned


  • Cut green beans into long thin slivers lengthwise creating about 3 slivers per green bean. Cook the beans in a large amount (2 qt.) of highly salted (1 Tbls) boiling water until tender . Plunge beans into cold water to stop the cooking process . Drain and reserve. In a medium size saut√© pan cook shallots in butter for a minute. Toss in green beans stir around till well heated . Add almonds, Season with salt and pepper. Simple and delicious.
