Ginger Chicken Thighs
Ingredients
- chicken thighs bone in + skin on
- salt and pepper
- 3 Tbls fresh ginger grated
- ½ onion diced
- 2 clove garlic chopped
- 1 apple peeled + diced
- ½ tbls curry powder
- 2 cups chicken stock
- 1 cup button mushrooms quartered
- 1 can artichoke hearts halved
Instructions
- Preheat oven 375°
- Season chicken with salt and pepper. In a frying brown off chicken on both sides. Remove from pan and set into a roasting pan, place artichokes around the thighs. To the frying pan add ginger, onion, garlic, apple, curry powder, + mushrooms , add a little oil if need be. Cook slowly for 10 minutes. Add chicken broth stir ,then pour this mixture over chicken. Roast uncovered 45 minutes. That should do it.
