Japanese Carrot Dip
Ingredients
- 2 cups carrots peeled cooked (very soft) + cut into 1/2 in. pieces
- 2 Tbls cup onion finely chopped
- 2 Tbls fresh ginger peeled + chopped
- 2 Tbls lite soy sauce
- ⅛ cup rice vinegar
- ⅛ cup canola or safflower oil
- 1 tsp salt
Instructions
- Put all ingredients together in a blender. Puree till smooth. You may need to stop the machine + stir a numerous times until the blender can really get going .It may start out a little thick but give it a chance.
- To make into a dressing thin out with a little more oil + vinegar. Good luck
