Mixed Berry Cobbler
An Easy Classic
Ingredients
- Biscuit Topping
- 1 cup flour
- ½ tsp salt
- ½ Tbls Baking powder
- ½ Tbls sugar
- 2 Tbls cold butter cut into small pieces
- ½ heavy cream + 1 Tbls
- The filling
- 4 cups berries - blueberries raspberries , strawberries, blackberries
- ½ lemon zest and juice
- ⅓ cup of sugar
- 1 Tbls corn starch
Instructions
- In a bowl mix together all your filling ingredients. Pour into baking dish.(Deep dish pie plate or something of similar size)
- Preheat oven 400°
- In another bowl whisk together your flour, salt, baking powder and sugar. Add your butter , squashing with your fingers until all pieces disappear and it becomes like course corn meal. Drizzle in 1/2 cup heavy cream mixing just until dough comes together. Remove to a lightly floured board. Pat or roll out dough to about 1/3 in thick or slightly smaller than the dish you will use to bake cobbler.. Cut dough into 3/4 inch squares. Place squares on top of filling , brush with a little heavy cream. Bake 30 minutes
