My Dads Beet Borscht
Vegetarian / Eastern European
- 2 beets coarsely grated 2cups
- 1 carrot coarsely grated 1/2 cup
- ½ onion fine chop 1/4 cup
- 1 clove garlic fine chop
- 1 bay leaf
- water or veggie broth enough to generously cover your Veggies
- 2 Tbls cider vinegar or lemon juice
- 1 Tbls brown sugar
- salt + pepper
- Garnish with sour cream or yogurt.
- serve hot or cold
- Put all ingredients in soup pot . Bring to boil, reduce heat and simmer 35 minutes. Adjust seasoning. a little more salt, pepper ,vinegar or sugar ? your choice.
