Porcini Mushroom Barley Soup

  • 1 +1/2 cups dried Porcini Mushrooms
  • ½ cup Pearled Barley
  • 4 Cups Water
  • 2 Carrots Medium dice
  • 3 Celery Stalks Medium dice
  • 1 Onion Medium Dice
  • 3 Clove Garlic Thinly sliced
  • 2 TBLs Olive or Grape seed oil
  • 7 cups Stock Vegetable,Chicken or Beef
  • 1 tsp dried Thyme
  • 2 Bay leaf
  • Salt + Pepper


  • Break up Porcini Mushrooms . Combine 1+1/2 cups of Mushrooms to 2 cups of water in a small pot, bring to a boil, turn off and let cool.Pulverize the other half cup of dried mushrooms in a coffee / spice grinder or mortar and pestle , set aside. At the same time in another small pot combine Barley with 2 cups stock + cook till tender. In a large pot slowly sweat (cooking covered) your oil ,onions ,celery ,carrots and garlic. Stir occasionally until translucent about 15 minutes . Now combine into the big pot the mushrooms ,Barley and all remaining ingredients . Simmer for 20 to 30 minutes. Season with salt + Pepper
