Red Rice and Beans

Another Great Rice and Bean Recipe , Pay close attention to directions

  • 1 + 1/2 cups red rice soaked in water for 10 minutes and rinsed
  • 2 + 1/2 cups water or don’t measure and bring the water to one notch up your index finger above the rice.
  • 2 bay leafs
  • 1 cup home cooked pinto beans
  • 6 oz. diced tomato
  • salt + pepper to taste


  • Place all your ingredients in a pot that has tight fitting lid. Bring to boil and cover . Reduce heat to lowest possible setting and cook 30 minutes. Lift lid for a moment to see if there is any water left in bottom of pot . If there is return lid and continue cooking 10 more minutes. If no water is left in pot add an additional 1/4 cup, cover and cook for the 10 more minutes. Turn off heat . Do not lift lid!!. Let rest 10 minutes . Fluff with fork . Perfect rice!
