Salmon in Creamy Tomato Sauce

Ingredients
- 1 tsp butter
- 1 Tsp olive oil
- 20 ounces salmon filet cut into 1 inch cubes
- ¼ cup dry white wine
- 2 oz. plain tomato sauce
- ¼ cup heavy cream
- salt + pepper
- fresh Basil
Instructions
- Heat butter and oil in sauté pan . Season salmon with salt and pepper. Add Salmon to pan . Gently turn salmon as its cooks . If you only lightly brown on just 2 sides that should be enough ( a minute or two on each side). Add wine cook 30 seconds. Add tomato sauce and cream . Bring to boil , Remove fish with a slotted spoon to your plates. If needed Reduce sauce for a few seconds. Pour sauce over fish . Garnish with fresh basil.
