Spaghetti Squash Parmesan

  • 1 Spaghetti Squash approximately 2 Lbs
  • ¼ cup water
  • Salt + Pepper
  • olive oil
  • 1 clove garlic
  • ¼ tsp red chili flakes
  • ¼ teaspoon herbs de Provence basil or oregano
  • tomato Sauce
  • ¾ cup mozzarella cheese
  • ½ cup Parmesan Cheese


  • Preheat oven 375 degrees
  • Cut Squash in half , pole to pole, scoop out seeds and pulp.Place in a microwave safe pan ,flesh side down . ( glass works great) Pour in water .Cover with plastic wrap and microwave 12 to 15 minutes . It is done when you press down on center of squash and its soft. Cool . Pre heat oven 400 degrees . Gently scoop out squash , breaking it up into spaghetti like strands.Lightly cook garlic + chili and add to squash along with your herbs ,salt , pepper and half of the Parmesan cheese . Place in a lightly oiled pie dish , pour tomato sauce over the top and finish off with remaining Parmesan and mozzarella. Bake 15 to 20 minutes on top shelf of oven. Easy!
