Summer Squash Stew
Pretty basic but Pretty good
Ingredients
- ¼ cup olive oil
- 2 clove garlic minced
- 1 onion medium dice
- ½ Tbls Chipotle in Adobo minced
- 2 Summer Squash large dice about 4 cups
- 2 Zucchini Squash large dice about 4 cups
- 2 tsp dried basil
- 1 14 oz. can chopped tomatoes
- S+P to taste
Instructions
- In a large pot or sauté pan heat oil , add garlic cook until fragrant . Next add onion, cook slowly until lightly browned. Add Chipotle and both squashes, continue cooking over moderate heat for about 10 minutes. The squash should still be quite firm. Now add remaining ingredients, cook an additional 8 to 10 minutes. Check seasoning. Enjoy
