Whole Baked Cauliflower
with Red lentils
Ingredients
- 1 Head Cauliflower left whole + Steamed
- 2 Tbls grape seed or vegetable oil
- 1 tsp whole cumin seeds
- 1 Tbls freshly grated ginger
- 1 clove garlic
- 1 carrot finely diced
- 1 tsp turmeric
- ¾ cup red lentils
- 2 cups water
- salt and pepper to tast
- 3 Tbls olive oil
Instructions
- Preheat oven 450°
- To steam cauliflower place in a pot with an inch or so of water, bring to boil , cover and steam until just barely done about 10 minutes.Set aside and cool.
- In a small pot heat oil add cumin seeds + cook 1 minute or until seeds begin to pop. Add ginger + garlic cook 2 minutes.Add carrots and turmeric cook 2 minutes now add your lentils and water cook slowly 15 minutes .Season with some salt.
- Place the head of cauliflower in a pie dish or something similar . Coat with olive oil and season with salt and pepper. Place on top shelf of oven and roast 30 minutes ,until browned on edges. Serve on a platter with lentils on bottom . Delicious
