Large carrots in large slices

small Yukon potatoes quartered

purple potatoes quartered

turnips cut same size as potatoes

medium sized parsnips in large slices

large sweet potato large dice

shallots peeled and cut in half

beets boiled + cut into large dice

whole garlic clove peeled

fresh thyme leaves

Instructions
Preheat oven 400°
Toss all ingredients then spread out on a roasting pan . Bake flipping veggies around a few times for about 1 hour or until tender and starting to brown. That's it
