Apple Kuchen

Equipment

  • You will need a 9 inch spring form pan for this recipe

Materials

  • 1 cup whole wheat flour
  • 1 cup white flour
  • ½ tsp salt
  • 2 Tbls sugar
  • 1 tsp baking powder
  • ¼ lbs unsalted butter cut in small cubes
  • 7 Granny smith apples peeled, cored and sliced into wedges, enough to fill pan most of the way up.
  • 2 tsp cinnamon
  • 1 cup light brown sugar
  • 2 cups heavy cream
  • 2 eggs
  • 2 tsp vanilla

Instructions

  • Preheat oven 375°
  • In a bowl whisk together flours, baking powder, salt + sugar. Add butter and mix by crushing with fingers until it resembles course cornmeal and holds together when squeezed. Press this mixture onto bottom and as far up the sides of spring form pan as possible. Layer your apple in overlapping circles in pan. Sprinkle with cinnamon and top off with sugar. Place pan on a baking tray and bake on center shelf for 1 + 1/2 hrs. Then mix cream, eggs and vanilla and pour over apples . Bake an additional half hour or until the custard is set. You can tell this when the Kuchen shakes like jello and a knife inserted into center comes out clean. Kuchen needs to cool completely before cutting.
